All - a Mac newbie here so apologies if I am asking some basic questions but just got a 2020 Mac mini and having some trouble setting it up with my 49" ultra wide monitor (Philips 499P9)

- My monitor has a dual display input function (Picture by Picture) where I can "simulate" dual screen through two inputs (1 x HDMI / 1 x UBS-C) from the same Mac mini. It all works except it will show the "black bars on the top and bottom" and both displays are squished in the middle horizontally. Display preferences is already at "Default by display" - anyone know how to fix this?

- The resolution is still not 5120x1440 despite USB C - I guess, this is still not possible even with the Catlina Mac OS

5K resolution is 5120 x 2880. Can I suggest holding down the option key and then clicking on scaled with the displays preference. You also might want to only use the one cable from your mini to the screen, ensuring you use the correct ports on your monitor, and that you don't have anything else in the adjacent thunderbolt usb c port. I put my monitor cable in the usb c port closest to the power port. I have a 5K monitor running well.
How much RAM have you got with your new Mac Mini - there is also the possibility that you don't have enough to effectively run two 5K monitors
