One of my biggest gripes with the M1 Air is it’s lack of native dual monitor support. DisplayLink is an okay, alternative, but the UX is not always great for me. Has there been any confirmation that the upcoming 14” and 16” MBPs will support a dual monitor setup natively? It would be hard to image Apple not supporting this on their higher end machines, but stranger things have happened.

No confirmation, but seems very likely. I also expect a bigger RAM limit, options for many more cores, and possibly a few surprises, when the higher spec ranges are announced. But confirmation only at launch, although leaks may improve confidence before then.
