I've been looking at the LG UltraFine 5K and the LG 32UL950-W to replace my aging Dell 24" 1080p display.

Comparing the specs, the 5K has a better resolution, PPI and brightness than the 4K display however it has a bigger screen and HDR.
Can you see individual pixels on a 32" 4K display when around 70cm away from the monitor? There is only $200 dollars (USD) price difference between these displays so it doesn't matter that one is more expensive than the other to me. Is there anything that I've missed that is important as a deciding factor? I do video work so color accuracy is important to me.

on macOS the default resolution for 4K is “looks like 1920x1080”. You can use a non-evenly scaled resolution to get a better “looks like” size but you’re (a) possibly going to see less crisp elements/fonts on screen, and (b) it’s much less efficient.

if you have a Mac with a dedicated gpu it’s probably not a problem but eg a 2018 Mac mini with only intel graphics can struggle.
