I am coming from a dual monitor setup and Windows, to a 27" iMac. Some observations...

- Resolution is higher and font size smaller so more difficult to see.
- If I have Safari maximised, some sites look awful. e.g. amazon.com - too stretched out. But if I have Safari narrowed, it wastes all that space.

How do you use all that space? Fonts too small for you too?

Coming from Windows, you're probably used to having one window filling for screen for each app. (That's my experience on the rare times I've had to use it.) Try to think about having different windows of different shapes and sizes all on the screen at the same time, and being able to view two different windows of two different apps at the same time.

If the fonts in Safari are too small, you can make the text display larger with <command> =
(Essentially, command with the plus and minus key will zoom in and out.)
 
Spend more time, you'll get familiar :) Yours is similar with mine in the first 1 month using the new iMac.
