Just wondering which ram is safe to buy for the current 27" iMacs? Also where best to buy from in the UK? Thanks for any help.

You must buy DDR3 SODIMM 1600MHz.
You can use the Crucial configurator and order in this site:

Thanks for the speedy response, do the 27" iMacs have 4 ram slots, or just 2? (I'm planning on upgrading to 16gb total)
