Heres the deal. I have an iMac 27" late 2011 currently attached to 2 23" cinema displays on Humanscale M2 arms for Eyefinity. Above it is a 23" LG on a Humanscale M8 dual crossbar LCD arm on a speaker stand that connects to a PS3 and a Vaio Duo 11. It can hold 42lb's and 1 or 2 LCD's. I've included a pic to show how its setup.

I have 2 upgrade paths.

1) Remove the 2 23" cinema displays and mount them on the M8 dual arm above the iMac in place of the single LG 23" and replace them with 2 x 27" 2560x1440 panels on the side arms. I could dedicate 1 23" cinema to both the PS3 and Vaio Duo respectively. The problem: It will cost approx 700-800 euro to achieve.

2) leave the 2 23" Cinemas where they are and replace the LG 23" with a dual input 29" ultrawide from AOC running at 2560x1080. It'll cost 350 rather than 7-800. Also as the iMac isn't powerful enough to run BF3 in Eyefinity at 5040x1050 but might be able to do 2560x1080 I could get a semi-eyefinity effect if the 29" ultrawide is used and then drawn down for a gaming session (I have vesa plates arriving that can lower the height to bring it in front of the iMac to some extent when needed). It would also be amazing for movies due to the 21:9 aspect ratio

So a couple of questions.
1) Can the iMac be set to display to the ultrawide 29" only in Windows when I go into an FPS game. iMac display disabled.
2) Does anyone know of a switcher I can use. The iMac connects to the 2 23" cinemas via 2 thunderbolt ports connected with TB to HDMI cables then HDMI female to DVI for the Cinemas.
