I know that the digitizer and screen are one assembly, but I have seen videos of peoeple replacing the plastic part only. Is that possible, or just good camera work? Any thoughts on this?

You can replace the glass only. But don't do it. While removing the glue that bonds the assembly together, you're going to break the lcd. And if you don't, there's going to be dust or scratches in between the layers.

Save yourself the trouble, and buy it all in one peice. Also, it might be cheaper to look for an iphone listed for parts, and take the screen from that. At the most, pay $40 for an 8GB.
