I was thinking of picking up a 2nd AppleWatch to use for sleep tracking, there are some relatively inexpensive used series 1/2/3 out there for about the same or less than a Fitbit would cost.. I know the AW doesn't have any native sleep tracking hardware and it'll all be based on the app(s) I decide to use but from a hardware perspective is there any reason to pick one model over another? I remember the older ones were much slower with normal functions, but I'll really just have the sleep apps installed.

I have a Series 5 that I wear during the day, and while the battery is good, I do like to throw it on the charger very night, I don't want to have to worry about trying to get it on the charger during the day.
 
My S0 (launch model) is used as sleep tracking and is still supported by AutoSleep and AutoWake app even if it was stuck at 4.3.2.

If you want longer Apple support, get the S3.
If you just want a no frills sleep tracking device, S1 is a better buy than S2 since you don't need the swim proof capability (they have the same processor).

I go to sleep with 100% on my S0 and wake up with 70% left (theater mode on, do not disturb on).
 
I’ve had an additional watch since the S2 came out and have utilized it for sleep tracking. I would suggest wearing your night one on your other wrist to give your normal wrist a breather.
 
I’m thinking of using my old S0 for this purpose. What apps are you guys using. How does that app know if you are asleep or just got the other watch on? Do you need to install the app on both watch’s?

I use AutoSleep with my S4 Watch. I put my Watch on the charger in the morning, before I get in the shower. I leave it on the charger while I have my coffee. I put it on when I get dressed to leave for work. In that time (about 1 hour) it's fully charged. I also put it on the charger for a few minutes while I'm getting ready for bed. It's usually around 60-70% when I put it back on for bed.
p.s. I have the Noise app turned off. That seemed to wear down the battery quite a bit. Also annoying. And, yesterday I removed the Cardiogram app from my Watch. Today, that seems to have made a big difference. All 3rd party heart rate apps seem to drain the battery quite a bit.
I've tried several sleep tracking apps, and AutoSleep is my favorite.

Same for me, you don’t need two watches to track your sleep. You should be able to charge while you get ready in the morning and just remember to charge for a few mins before you go to bed.
 
I use my S4 to track my sleep, too. I charge the watch in the evenings after I fill my rings (that gives me a chance to wear my mechanical watches). I then top it off in the morning while I take a shower. In the evenings, I'm at around 65%, which includes a workout or two. In the morning, I'm usually around 90%.
