Something that is possible but I don’t know if the Pro can do this. Imagine taking a photo in ultra wide mode but then you can crop or zoom in on the centre portion of the photo because it has merged photos from the other lens. Would be a nice feature and give some interesting post processing options.

You mean something like this?

Actually it's not possible. The three lenses have a different perspective. If one image was placed over the other from another lens, the two images won't line up. At some point there would have to be a jump from looking at one image with one lens to the other image with the other lens. It can't be seamless.
