The reason that you need to not use the computer is that OSX overwrites empty space very quickly relative to other operating systems. Recovering trashed data relys on tha fact that emptying the trash doesn't remove the data, it just removes its address from the catalog. So as long as the actual sectors of the hard drive where the data live(d) has not been used to store something new, then you have a chance of recovery. BUT - OSX actively writes swap files to the drive in the background, and does defragmenting at night, so it destroys the chances of recovery, and the longer you wait the less chance you have.
The best program for recovering Mac data is DataRescue II from ProSoft But they also disclaim the chances of recovering OSX data after you empty the trash, for the reason above.
