Ok, I have been a long time Mac and Windows user.

I wonder what professional level software are Apple project managers, controllers for different departments, etc...

What is it that this large corporation uses daily to run their business?

Accounting?
Project Management / Time Management?
Job Costing?
Asset Management?

What about the retail end? Inventory? Order Management?

I am aware of Timberline and SAP options, but what does Apple do?

Don't we all love Paint.

Nobody has any real ideas? I appreciate no one making stuff up.

The iMacs in the stores use a custom built front end that ties into Filemaker, so I guess they use that in some capacity for inventory management, although we also know Apple use a lot of Solaris servers for their main databases (Sun said as much). Can't speak for the other apps though.

Filemaker

I think Apple have finished re-puchasing FileMaker in a round about, non-direct way. So I would imagine thay use Filemaker for most things.

The early talk about spinning off Claris turned out to be just that. They've quietly held onto Filemaker all along :)
