I don't see how capacity makes a difference in terms of noise level...

Assuming they are from the same brand and series they are about equally fast and make the same noise.

If you want to get down to the details the 250GB is slightly faster because it only uses the fastest half of the second platter.

But on the other hand, a disk gets slower once it gets fuller, so the 320GB will have an advantage when the disk is getting full.
