3g iphone at&t sim card question?

ok my question is if i were to buy the 3g iphone and get the data plan is all this info stored to my sim card ? i was thinking if i were to call att and tell them im switching phones to another 3g phone and got a cheaper data plan. so if they switch everything to the other phone wouldnt i be able to put the sim back into my iphone and use it ? Doesnt everything have to do with the sim ? Would like some help ?

I honestly don't think AT&T offers a cheaper unlimited data plan than the iPhone plan.
