3gb RAM Difference?

I ordered a new 17" MBP and went with the 3GB of RAM option, does it really make much of a difference? I heard it doubles performance over the 2GB model. Also I stuck with the 160 GB HDD as people say 200 GB is way too slow is this true.

Running heavy duty apps (e.g. Photoshop and Parallels simultaneously) it will rip the 2GB's performance to shreds...
