Try AirServer or Reflector. Both come with a free trial. Then Airplay from ATV+ app on your phone/pad.

Those won't work, as they only support screen mirroring via AirPlay, not media playback. When you playback something on Apple TV+ or iTunes over airplay, it doesn't actually stream it from the phone to the media player, it sends the media player a link and the media player grabs it directly from Apple's servers, which those types of apps don't support. https://tv.apple.com will be OP's best option, like I mentioned above.

I don't think there is, but I believe you should be able to watch them on https://tv.apple.com on your Mac with Mojave, since it doesn't have the TV app.
Thanks for this link. We finally tried it last night with Greyhound. Strangely, I could not get it to work with Safari (play button with a diagonal line through it) but it ran fine in Firefox. It looked like it should have had Dolby Digital, but my receiver did indicate it was receiving a DD signal. The video seemed to be DVD quality on our 1080p projector. Not all that impressed with Apple TV.

you're watching it in a web browser, and then air playing. Quite possibly the worst way to do it.
I'm not sure it supports 5.1 in the browser, Netflix does not, can't find info for apple
if you're screen mirroring, it defiantly won't support 5.1

when using my aTV 4k, or the app built into my TV, With Dobly vision + atmos, it was awesome.
or with an aTV-HD, you'd get 1080 and 5.1. Which also looks and sounds great.

You'd probably have a better experience with the HDMI dongle for your iPhone or iPad. than using the browser.
you'll top out at 1080, but I think you'll get 5.1
