4S - remove 5.0.1 jailbreak, not restore to 5.1?

I have a 4S jailbroken on 5.0.1

Want to sell to someone that doesn't want a jailbroken phone but wants to still be on 5.0.1 and NOT 5.1 ?

If I remove the jailbreak by doing an iTunes restore... now that Apple isn't signing 5.0.1 anymore - will I end up on 5.1???

Other ways to remove the jailbreak and stay on 5.0.1 for my iPhone 4S???

You cannot remove the jailbreak without a restore. You can only restore to iOS 5.1.
