iPhone 4S - restore - ios and game files

I want to do a restore- set up as new phone on my 4S - just to clean house a bit and refresh things. I've got some weird keyboard stuff happening.

Will it force ios 6 on me? It's currently running ios 5.

And - if I have game saves on it - will it save those in the backup even though I'm restoring as new - and can I get those back at some point?
