What are everyone's thoughts regarding the 1TB SSD upgrade in the new 5K iMac? 512GB is the minimum I'm considering and will be using an archive drive for infrequently accessed files.

But it would be nice to have the headroom onboard, anyone else gone for the 1TB option?

I wouldn't pay lots of $$ for lots of solid state storage. I have a 1 TB fusion drive (128 GB SSD, late 2014 5k model) and haven't even maxed out the SSD space with OS X, Office 2016, Adobe PS + LR, OpenOffice and more apps. All my data is on 3 external drives (2 TB for Time Machine, 6 TB for back-ups, 8 TB TB drive for work stuff).

Even 256 GB should do. I don't expect e.g. OS X 10.16 in 5 years from now to become a bloatware OS.
