Hey guys I have an iMac 2011 with the SSD as the Boot/Applications drive. I am replacing the HDD with a larger capacity one, but deciding between 5400 or 7200 RPM.

Since it's essentially for Storage, 5400RPM would be more appropriate, however, all my iTunes media (900Gb of Music and Movies) will be stored on there. My question is: Will the RPM speed noticeably affect the time the Music/Movies etc load?

There's more to HDD performance than rotation speed. Some 5400rpm drives perform better than some 7200rpm drives, due to higher density. At any rate, most 5400rpm drives will be more than sufficient for your media.
