I like to switch between my current iPhone 11pro and a back up 10s Max. My question is, if I decide to get a newer 5g iPhone can I use that new 5g sim card in the older non 5g iPhones ?

If its the right size, sure. You won't get 5G on the older phone of course, but everything else will work the same.
