My 5S has been occasionally "crashing" randomly at certain times with music stopping and the apple logo appearing in the center of a black screen before the phone comes back to the home screen and asks for a password. Has this been happening to anyone else?
 
Yup, it's happened to a few people on here including me.

Before the black screen with the apple logo, did you notice a solid dark blue screen as it crashed?
 
I had it happen to me only once, and it seemed to be when one app was trying to take over audio from another app, and that triggered it. I haven't seen it since then.
 
I had it happen when using the music app, did it twice, when I tried to skip to the next song.

No, no blue screen, it just resprung.
 
Happens to me every couple days. This last time was when I was entering multitasking. Do we need to take our phones back or is this iOS 7's issue?

I hope it's an iOS issue. Otherwise, this and the sensor issues would mean Apple produced a really poor product this time.
