I have one 5th Gen AirPort Extreme and one 4th Gen AirPort Extreme setup as a "roaming" network. Do I NEED to have a seperate SSID and network for 5GHz in order to use 5 GHz?

No you don't. That is if you want to have a 5GHz only network. If you leave it at the default it will run both 2.4 and 5 depending on the client.
