You better get the airport extreme. It support up to 1000Mb/s, but the airport express only support up to 100Mb/s.
 
Unless you specifically want the audio output of the Airport Express, the Extreme is the more capable device.

I imagine the Airport Express has the lower ethernet speeds because most people use it for wifi, not routing over ethernet. It's more like an AP. And you can get something comparable but not Apple's for a LOT less. For general routing and all around use the Extreme is a much better choice.
