6630m(mac mini $799) vs 6490m(15" MBP $1799)

Which gpu is better?

Is one better for games while the other is better for video editing or professional level software?

6630m would be better for both.

6630m is 480 shaders@485mhz
6490m is 160 shaders@750mhz

Ie the 6630m is theoretically significantly more powerful
 
So, on that note, would programs like fcpx and adobe cs5.5 run better on a mac mini than on a macbook pro?

It would be a little disheartening since the macbook pro is significantly more expensive to say the least.

No. The macbook pro has a faster CPU (quad core vs dual core in 6630m equipped mac mini). Most applications except for gaming does not take much advantage of a faster GPU.
