Using software RAID to mirror 2 drives with just 1

Hi!
A long time reader, first time poster here.

Does anyone know if it's possible to mirror 2(for example 500 Gb) hard drives with one(1 Tb) using the software RAID of OS X? I've heard of a few RAID cards that can enable this, but is it possible by using software? Has anyone tried a similar solution?
