Honestly, I think I only have one app that isn't freeware, BBEdit, and my work paid for it. The Open Source community has really provided some great stuff. Just to list some apps:

VLC - Media Player. Only use it when watching numerous shows/movies back to back since quicktime doesn't support playlists. Otherwise I use Quicktime with...
Perian - Codec which allows Quicktime to play as many different media formats as VLC.
Trailrunner - Route planning freeware. I use it to find and plan biking and running routes. Can also import routes other people have created. Very fun (once you step back from the mac and go outside 😉 )
Adium - Chatting.
Transmission - My favourite Torrent client. Very simple to use, and yet very powerful.

Inkscape - I now use Illustrator, but this is a kick ass free alternative. 🙂

Transmission - simple, works
Skitch - fun and powerful screen capture tool 😛
Quicksilver - using less and less 😕
