My battery just drained 7% in half an hour. What the hell is up with this? It was at 56% last night when I got home from work when my 11 pro max is usually at 65% after a day of work. Isn’t this supposed to be a better bigger battery? Am I doing something wrong?

You can’t. It doesn’t read the battery state of charge accurately.
For giggles, discharge the battery to zero cutoff then charge it fully to 100% and let it stay at least 30 minutes still charging at 100%. Doing this will help teach the SOC monitor where empty and full is to help it more accurately estimate SOC

So what is off? Is the percentage wrong or is the battery icon showing wrong?

I wonder why this is on brand new iPhone. Can you point me to a link that talks about what you describe.
 
So what is off? Is the percentage wrong or is the battery icon showing wrong?
It seems that the battery percentage is over reported by about 4-5% after a charge and the over reporting is <1% as you reach empty. Thats is what I have observed using Coconut Battery.
 
Personal experience has shown me that the battery charge indicator can be erratic. For the most part it usually seems pretty stable, but there are times I’ve experienced obvious irregularities.

So here’s an update. I went to a Corporate AT&T store last night and switched my old SIM card for a new white 5 G one. So far today after being off charger since 8 am it’s still at 89%. Much much better!
