I have updated my 6+ to 8.1.1 (without UDID)

Is it possible to restore back to 8.1 in iTunes?
 
Yep. Connect via USB, start iTunes, and then hold both the Power and Home buttons for 10 seconds (time it). Once the 10 seconds are up, release Power and continue to hold Home. After 5-15 seconds, iTunes will prompt to restore and will give you 8.1.

You will lose everything on the phone.

When I did the update to 8.1.1 I saw the attached text. (Devices updated to iOS 8.1.1 beta can not be restored to earlier versions of iOS)

I still would now back to 8.1. So you think that is is actually possible?

It'll work. Apple doesn't *support* going back to 8.1 but it'll be fine (poor wording on Apple's part).
