I hit "OK" to a carrier update and it completely screwed up my iPhone...kept rebooting.

Warning to anyone with an iPhone 5, don't update the carrier if it asks you. Apple support almost confirmed this too. I couldn't even backup it kept rebooting every 5 minutes, but somehow managed to backup and restored.
 
Yes you want to have others avoid issues you have, but your blanket statement is so incorrect.
 
iphone 5 here: always am doing the carrier update every time i connect iPhone to iTunes.
on my case, there were and are, no problems with this even after updating to iOS 8.3

Which carrier do you have? That'll be important because not all carrier updates will be affected.
