8 Core Locks up

I have a Mac Pro 8 Core with 5 Gigs RAM. I've been having problems with large, truck graphics. The file sizes are approx 2.8 Gigs. It often seems in Photoshop CS3 I can only perform 1 or 2 operations (eg pasting in a new logo) before I get the spinning wheel. The Quit Application window usually shows Photoshop Not Responding. I have to Force Quit Photoshop and then do a hard shutdown of the computer using the power on button.

Any suggestions? I have 1.25 TB of internal hard drive space.
