Yeah, like what tuffluffjimmy said, there's never ever ever ever going to be an 80GB iPod touch. The storage capacities for flash memory goes in powers of two. 1, 2, 4, 8, 16, 32, 64, 128, 256, 512... etc so right now we have an 8, 16 & 32GB iPod Touch, but the next size would be 64GB & then maybe even 128GB.
BUT, with the expensive price of flash memory right now, especially that size, that is not a viable option for Apple. Maybe with flash memory prices dropping constantly we will see larger capacity iPods (Even 256GB flash-based iPod Classics!

)
But, yeah, the biggest app, Texas HoldEm, is ~130MB, but the rest of them are under about 70MB, averaging around 1 or 2MB each, so you will have no worries in running out of space (I hope!).
Personally, I only have a music library of 300 64Kbps AAC (Purchased ones are either 128 or 256Kbps) (about 1.2GB) of music, I listen to 5 weekly podcasts, but I have NOTHING else (No movies, etc), so space for apps (which is quickly approaching the amount of space my music needs) is now worry for me on my 8GB Touch.
