I have lined up a great deal on a 13" 512GB rMBP. But it has 8GB of RAM. Wanted to grab it since I have a lot of travel coming up.

I do some weekly work in Final Cut X (using 512GB drive as scratch disk) and record lots of podcasts with Audio Hijack/edit in Adobe Audition.

How much with the 8gb vs the 16gb impact me?
 
It will impact you positively to have 16gb over 8gb but not nearly as much a positive impact as the negative impact from going from a quad core to a dual core wil affect you.

THIS is is SO true! When i sold my last MBP (early 2011 i7), i picked up a 13" to see if it could handle PS/LR/etc. It was wicked slow compared to the i7. I then exchanged it for the 2011 iMac 2.5GHZ i am using all these years later.
