Could someone please explain what the process of 'updating prebindings' is?
And why it's necessary and how & when to do it?

It's a new one for me...

Taken from the Cocktail help manual.

Prebinding repeats the installation step “Optimizing System Performance” and should be used if the system has crashed while performing an installation or an update. Prebinding updates the linking among applications and the shared library files that may be required to run an application. Whenever a new application is installed, this information needs to be updated. If the information is not updated, the resolving of these links is calculated when you launch the application, which takes added time and slows down performance.

Do you specifically need this 'Cocktail' app to do it? Any links?

Can you do it just with the OS/Terminal or are their any other apps/utilities that do the same thing?

I run MacJanitor & the usual permission repairs on all the Macs (6) at work now & then...

Try;

sudo update_prebinding -root /
