Maybe this is crazy talk, but if I used a USB hub with like 3-4 USB outlets and then had it filled in with plugged in electronics (phone charging, iPod, mouse, etc.) would that overload the computer and cause issues? Could this damage my MBA?

No, it won't damage your Mac. However, if those devices are being recharged from the USB port, it's possible the port may not provide enough power to recharge them. If you encounter that, either unplug the culprit from the hub and plug directly into a USB port on your Mac, or use an AC power adapter.
