A really trivial question on Mail.app fonts

How do I set the compose font to San Francisco?

Since upgrading Mail.app has kept my preference for Lucida Grande. I quite like SF and would like to use that for composing emails. It's not showing up as a listed font, however (either as SF or any combination of 'System' or 'Apple').

Am I missing something really embarrassingly obvious?
