If i am viewing someone else's webcam, can I record them?

Via network and having the iSight activated over LAN?

Or with the help of a chat software - recording calls?

There is SnapZpro to record a portion of the screen, maybe that does help.

To answer your question rather than think you're a stalker.

Yes in iChat you can record your chat sessions, it asks the other person for permission first, and Im pretty sure they have to be using iChat too.
