What other dashboards can I use besides "Steps" and "Walking + running" without any external devices? I have an iphone 5s.

Go to health data. Whatever is available there you can add to the dashboard.

Edit: I guess you're asking how can you populate other data without external devices? key them in manually.

In the Health App:

1. click health data section on the bottom.
2. Pick whatever vital section you want to appear as a dashboard (for example > sleep > sleep analyist)
3. Click "show on dashboard" (this adds the entry to the dashboard)
4. You have to manually go into whatever you added and enter data yourself.

The only dashboard that is automatically populated is Steps, Walking+ running distance, Flight climbed. Everything else has to be keyed in by hand. e.g. how would your phone know how much you ate to track your calories for example?

Manually? Well then the app is pretty useless.

Why are you surprised that you have to enter the data manually if you don't want to use external health tracking devices?

The health app is a centralized location where health data is stored that is imported through 3rd party apps and health tracking devices.
