I want to give my jailbroken iPhone to a friend, but before I do that I'd like to erase all of my personal info/apps/photos etc from it.

My question is, if I do "Erase All Content and Settings" - will my iPhone remain jailbroken or will it be brought to a brand new state and need to be jailbroken again? What are my options?

Erasing all content and settings will not only wipe your jailbreak, it will render the phone un-bootable. This is normal, and will require a restore + re-jailbreak. This is the safest thing to do to protect your data.

Also, if you've purchased applications on Cydia, it's probably a good idea for your friend to purchase his own, instead of re-using yours. So erase, restore, re-jailbreak, then give it to your friend.
