So, I am in need of something that will allow me to take a picture everyday, add it to all the pictures I've taken on previous days, and turn it into a movie that I can publish. So, basically a timelapse movie that grows more and more every day.

The difficulty factor is the images aren't from the isight, but from a camera, so I actually have to load the SD card, crop the image, adjust white levels, etc.

Is anyone aware of any software I can just 'drop' a new jpg everyday into, press a button and VOILA have a (one frame longer) movie appear?

Well, if you're only doing one frame a day, I'd wait about 30 days before ever bothering to string it together. You'll need to decide on your frame rate... if you're going to do 10 fps, then it's probably worth waiting until you have 30-60 days of pictures.
You can load all of these simultaneously in Quicktime Pro if you number each of the files consecutively. I think there are a few tutorials on this out there.
