I currently have a network in my home that consist of a 2011 Time Capsule, and a 2011 Airport Extreme (to expand the network). The Time Capsule storage is getting full and I am considering getting a 3TB Time Capsule with 802.11AC Wireless. If I swap the time capsules would the new one use AC wireless even if the Airport Extreme is using 802.11n? or would it be better to just replace the AE as well?

I'm not 100% certain, but it might be easier just to swap out the Time Capsule for the new 802.11ac version since the AirPort Extreme base station is built into it. Less hassle that way in my opinion.

Yes. You can replace the Time Capsule with a new AC compatible version. If a client connects to the TC then it will use AC if it is capable, however if connected to the Extreme it will only connect at N-speeds. However, the new Time Capsule is much more powerful than the older models and you may not need the Extreme to extend the network at all.
