Earlier I was playing Monkey Ball and BiiBall and realized I always had to tilt the screen to compensate so the ball rolled foward. When I open up A Free Level and lie it down on any surface, my ipod is always 50' ish pointing towards the wrong way (not balanced). What gives?

The settings each program uses to determine at what angle the accelerometer is "flat" in that program are likely just different for each one.

How does one use applications that require the accelerometer but does not have an integrated calibration mechanism then? It could be off by a little, but 50'?
