My MacBook recently died and I need to retrieve the data that's on it. This particular model uses an mSATA interface for the SSD, but does anyone know if it is compatible/safe to plug the SSD into another PC/Mac with a USB adaptor?

PC: No, the Mac file structure is HFS+ which the PC can not normally read. You would need additional PC software to allow it to read Mac file structure. Google what PC software would work for you or maybe someone else that is more familiar with PC software can help.
Mac: Yes.
