I setup an Apple Watch SE for my son using my phone. He doesn't have a phone, just the watch. Now, I want to access all his activity/workout data for the past 30 days as he needs to document it for some school activity. I tried to get access to the data from the Watch app on my phone, but it's not working. It says permission needed on the watch, which I grant every time but data doesn't show up. How can I go about getting this data from his watch? I didn't find anything on icloud.com when I logged in using his credentials. I have confirmed that the iPhone & watch are all on the latest version of the OS.

The data is in the Fitness app and in the Health app on your phone

I see the fitness data from couple of days ago, when the sharing was enabled. Is there a way to get the last 30 days?
You should see all the data from the watch from the time it was paired to your phone. When did you do that?

It's been paired to my phone for more than a year. My son doesn't have a phone, I used mine to activate his watch.

Then the data is there.
Go to the Health app, the section "exercise" for example, at the bottom there is "show all data".
