Which do you recommend? Is one method considered more reliable than the other?

If using the device-to-device transfer method, roughly how long should I expect it to take?

It's taking forever at least my own here... I tried both methods, iCloud seems to be the "fastest" but still taking forever.
 
I'm doing from phone to phone now and it's only 40 minutes

iCloud was telling me an hour
 
The phone-to-phone also transfers app credentials, you should be able to just open apps where you've already got credentials done and Touch/Face ID set up. iCloud restore does not do that: you'll have to sign in to all your apps again.
 
I have done the transfer the last several years. How long it will take "depends". For one thing it needs to download all of your apps to install them.

I have always always always done a restore from my Mac. I don't trust this over the air stuff as much. I have had very little issues doing it this way but that's just me. GOOD LUCK and CONGRATS!
