So my iPhone is shipping to my work and I am wondering if I need to wait until I get home to activate it. I have iTUnes on my work computer but never use it. Can I activate it at work, while still using my home computer for syncing and future updates?

Yeah it only needs to talk to iTunes very briefly (so it in turn can contact the mothership for activation) - you can then just unplug it when it starts asking about setting up an iTunes Store account and naming the phone etc.

I've done many of them at work this way. (People at the workplace tend to think plugging into iTunes themselves is too complicated and believe it's IT's job, much like with changing ink cartridges etc.)
