Probably note - activesync (EAS) on the mail.app on your Mac uses web services to hit the exchange server which is a part of Exchange 2007/2010 only.

You could use POP3 -

There isn't a way to make HOTMAIL including all of your folders etc sync to Mail, I have checked this with Hotmail too. My present solution - I have forwarded my Hotmail to gmail which does fully synch. I am also looking into the latest Entourage program.
