Activity App - how to change level

I kinda rushed through the set up so I didn't take a lot in, but my husband left his at the basic level and it's too easy to complete. How can he change the level? I can't find the option

should be able to do this from the watch by force clicking over than area.(pushing down on the screen with some force).
