Does anyone know if it is possible to log the CPU utilization of processes over time? Activity Monitor does not appear to offer this functionality on it's own (or if it does I can't figure it out).

Basically I need a means of looking for spikes in CPU utilization and what process that spike is attributed to, but I can't watch Activity Monitor in real-time.
 
No ideas? Even if there is no off-the-shelf GUI-based tool to do this, I would think it would be possible from the command prompt.

My command-prompt-fu is little rusty, but I am thinking this might be possible by logging the output of Top..?
