I'm going to University next September (hopefully), and I want to be able to play my PS3 on my Macbook display (instead of taking my massive TV).

And I'd also like to be able to connect my freeview box which is a RCA/Scart connection. My PS3 is also RCA/Scart.

So is there adapter of some sort which will let me do this?

No. Macs have only outputs, no inputs. I was willing to do the same with my iMac but unfortunately it's impossible, if something hasn't changed in few months

i was in the same situation as you. going away to school without a tv. i tried using a "dazzle" on my HP laptop but there was so much lag i returned it. pretty sure theres no way around it. i ended up buying a 19" lcd toshiba that sat on my desk :)
