Is there anyway i can do this? There are some files that i want to have a default application on, and then have aliases to open with but sometimes i need to open the file with another application, can you help me?
 
Here's what I do:
I have an alias of a document.
That alias is linked to the document which, in turn, will launch with some default app when double-clicked.
If I want to use a different app for that document, then just drop that alias on your desired app. I have a folder with aliases (aliaii?) for about 15 different apps. The document's alias will only open on the apps that might support that document.
Or, you don't have to use a folder of links to apps, like I have - you could just use your dock. Again, dragging the document across the icons in your dock will quickly show you which apps might be used with your document. You may be surprised how many different apps will open some kinds of documents.
